Cookie and Challah Monsters

Dear JSL and NHL,

Bubbe and Grandpa are in town this weekend. Since we are not able to be with them for Thanksgiving, they came up to spend time with all of us. On the way here, they stopped in Queens to get some special treats. They knew that the two of you really like challah. They also asked if they could get you a special treat at Violet’s Bake Shop.

Daddy told them that it would be okay for a special occasion to get you cookies. When we were out at dinner Grandpa mentioned that you may want to only have half today and the other half tomorrow. We couldn’t imagine why until we opened up the box. This is what we saw.

Retro Candy Treats

Over the weekend, I was away with my parents for a family bridal shower. Before we came home, we stopped at a local store to get some items to bring back home for the boys. As I passed down an aisle with sweet goodies, something caught my eye. This is what I saw:

Charms Memories

So many sweet memories of having Charms and Original Charms lollipops (not the ones w/bubble gum in the middle). When in Hawaii and stuck on a road thanks to lava flow, the Charms in my purse helped my mother as her sugar dropped dangerously low. When I saw these, I had to get them to bring home for the boys –er  for all of us.

National Diabetes Awareness Month

Nana and BuzzIn 1980, the world changed for my family. Not only was it the time that my mother was pregnant with my little brother, it was also when she was diagnosed with gestational diabetes. For most women, the diabetes story ends once they deliver their baby. Yes, they are more at risk for developing adult onset later on, but it is something they just monitor. My mother was not as lucky. Her sugar remained high. She was put on a low dose pill and for years and years it kept everything in check.

Many years later, my mother’s sugar spiraled out of control. She started to see an endocrinologist and was put on insulin, told to monitor her blood levels multiple times a day, and to change her diet. I am happy to report that with diet changes, doctor monitoring, and new advances in medicine, my mother is no longer insulin dependent.

P1060229TechyDad and I worry about diabetes. It is a factor that both of us need to think about. You see both of our mothers are diabetic. Watching my mother’s battle with diabetes has inspired us to watch our carbohydrate intake, increase multigrain products, and use different sources of protein in our diets (egg whites, quinoa, tofu, and others). A staple in our house are packages of egg whites. Thanks to a fantastic little steamer, we can make omelets in the microwave using All Whites in less than a minute. We simply pour the number of ounces that we want into the steamer and place it in the microwave. If we want to be fancy, we add in fresh vegetables and/or soy bacon.

November is National Diabetes Awareness Month. As a member of Global Influence, I am participating in a sponsored Fit2Fight Campaign from Better’n Eggs to get the word out. As you can see, diabetes is part of my world and we try to make healthier eating choices. Here is a new recipe courtesy of All Whites that I hope to try one day soon that would make a great diabetes friendly option with lots of protein and vegetables.

Vegetable & Grain Quiche 

Nutritional Information can be found on the All Whites website.

Preparation: 15 minutes  
Baking: 55 minutes  
Time-To-Table: 1 hour  10 minutes  
Serves: 6

  • 1 cup cooked brown rice
  • 1/4 cup sliced green onion
  • 1 tablespoon whole wheat flour
  • 2 cups frozen broccoli cuts, thawed, drained
  • 1 small red bell pepper, cut into thin strips
  • 1/2 cup mushrooms, sliced
  • 1 cup (8 ounces) Better’n Eggs®
  • 1 cup skim milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon hot pepper sauce
  • 1/2 teaspoon dried basil leaves
  • 1/8 teaspoon pepper
  • 1/2 cup shredded Swiss cheese
    1. Heat oven to 350°F. Spray 9-inch pie plate with nonstick cooking spray; set aside.
    2. Combine rice, green onion and flour in medium bowl. Spread over bottom of pie pan. Top with broccoli, red peppers and mushrooms.
    3. In medium bowl stir together Better’n Eggs, milk, salt, hot pepper sauce, basil and pepper. Pour over vegetables. Top with cheese.
    4. Bake, uncovered, 50 to 55 minutes or until knife inserted in center comes out clean. Serve immediately.

Bridal Shower Weekend Out West

Hello from sitting at my brother’s house while away from the boys for the weekend. I went with my parents to a bridal shower for the soon to be bride of my first cousin. It has been a non-stop day filled with many memories. Here is the gorgeous cake:

Of course, I miss my boys, but seeing my niece and nephew and being able to play with them for a little while without distractions has been a different experience.

Now, I feel a little helpless. Poor TechyDad is home with the boys and JSL is not feeling 100%. Let’s just say that they had an exciting evening with carpet cleaning, medicine avoidance, and more. Hopefully everyone will get rest and I can give them all hugs when I get home on Sunday.

The Great Veggie Dilemma

Confession time. I have one child that is a fantastic eater. NHL is eight and has almost always been good about eating fruits, vegetables, and other nutritious items. Sure, there was a small point in his toddler life that he refused a few things here and there. When he was little, he would order broccoli and mushrooms on a pizza as toppings. Yes, he would request broccoli as a side dish.

Always watching himEnter JSL, a four year old picky eater at best. Daily battles over what he can eat and what he will not eat happen. Where NHL will give things a “no thank you” try and usually like it, JSL will go on a hunger strike. His preferences will change from day to day, so TechyDad and I never know what preferences we will face. Chicken nuggets that he devours one day, may be tossed to the side three days later. We simply never know. We are able to get him to eat other protein sources. Nutritional drink supplements, cheese, PB, and sometimes Greek yogurt if we stand on our head.

Where we get to a stumbling block are fruits and veggies. JSL will not eat grapes, strawberries, or most other items. While cherry picking, he ate some in the orchard, but declared they were gross afterward. Apples are hit and miss, as are bananas. About the only way he loves fruits are in a smoothie. We can do that from time to time, but they are not as easy to do on the fly.

Vegetables rarely pass by JSL’s mouth in a whole or recognizable form. SERIOUSLY! He used to eat cucumbers and possibly some other items if we could bribe him. Not any more. We have attempted those recipes where you hide items in them, but they are quite time consuming thanks to making vegetable purees. Oh and most of the time he would not touch them anyway.

While out shopping the other day, I needed some pasta. I usually purchase whole grain pasta since it is the healthier option. Something caught NHL’s eye. He saw the colored vegetable pasta from Barilla. I told him to pick one out. He selected the Piccolini that has zucchini and spinach.

Our little secret

The other night, we made that with the Ronzoni Garden Delight we already had in the house. Both have a full serving of vegetables in each portion. What did the picky eater think? That photo above is JSL devouring the pasta. It may not be a solution, but it is a good alternative to have when we are going to serve the kids pasta.
