Make and Take Apple Ale Cake

Apple Ale Cake

The summer is here and that means we often get together with family and friends for a BBQ. While everyone is home from school, the focus is away from our usual structure. We take it day by day and you never know when we may make plans to head off to the lake to enjoy the sun and fun. Time at Saratoga Lake

Typically, I am asked to bring dessert. I love to make sweet treats to share with everyone. While we always bring a watermelon, cherries, and other juicy summer goodies, cake is a nice touch to make it extra special. The kids love cookies, there is something beautiful about cutting into a freshly made cake to share with those you love. In the warm summer months, heat and humidity mean heavy cakes are not the best choice. Recently, I decided to make a twist on a recipe that we enjoy. I wanted to see how apple ale would lighten up or change a beloved autumn favorite for the summer. Not everyone enjoys other fruits in cake, so apple is a nice safe item that most people will enjoy.

I went to our local Price Chopper Supermarket to look at my adult beverage options for this baking project. The in-store solutions center was full of great House of BBQ products.

From this area, I decided to get the Redd’s Green Apple Ale to use in the cake and extras for adults to enjoy. In addition to this, I picked up some of the Leinenkugel’s Summer Shandy and for those that would prefer something without alcohol, a Gold Peak Tea. Then I picked up some granny smith apples to pair up with the Green Apple Ale in the cake.

Apple Ale Cake Ingredients

Ingredients you will need:

  • 4 granny smith apples sliced thin
  • 2 cups of sugar, plus 5 tablespoons extra for on the apples
  • 3-5 teaspoons of cinnamon
  • 3 cups of flour
  • 3 teaspoons of baking powder
  • 1/2 cup of vegetable oil
  • 3/4 cup of Redd’s Green Apple Ale
  • 1 tablespoon vanilla
  • 4 eggs

Preheat your oven to 350. Be sure to grease and flour your bundt pan. Valuable lesson from me, really, really, really do this because apparently my nonstick spray was not working properly. Lesson learned and IF your cake sticks don’t panic. You can cut it out and make it into a delicious crumble with whipped cream to make it pretty.

  Making the Apple Ale Cake

Peel and slice the granny smith apples into a mixing bowl. Sprinkle them with the cinnamon and five tablespoons of sugar. Set this aside while making the dough. Later on you will need to drain any liquid that settles out of the mixture.

Pour all dry ingredients into a mixing bowl. Make a well in the center and pour the remaining wet ingredients into the center. Mix with a large spoon (no need for a mixer) until everything is mixed. The dough will be quite thick.

Spoon approximately a third of the batter into the bottom of the bundt pan. Drain the apples and put a ring of the apples on top of this batter. Then, put another third of the batter on top of the apples. Use more of the apples in a second layer of fruit and top this with the remaining batter.

Please note: If your granny smith apples are huge likes the ones we had, you will not use all of the apples in the cake. We tossed them into baking dish with some rolled oats and pats of butter on top to make a quick apple crisp for the kids.

Bake the cake for about an hour. Allow the cake to cool completely before removing from the bundt pan. Cool completely before taking cake out.

So how did the Redd’s Green Apple Ale change our apple cake? It made it lighter and a lot more moist. The inside has a different consistency that is much more summery. It smelled amazing before and after baking. Oh and it was delicious to say the least. Certainly a new favorite that we will be making and taking when invited places.

Apps to Encourage Summer Reading

#VZWBuzz DisclosureSometimes reading can be a chore for kids during the school year. Older children have to read specific books for classes and it can be a challenge to push through something they may not enjoy. This can result in some kids becoming reluctant readers. As a reading teacher, I love the summer and the freedom for my boys to be flexible and read fun books. While I would love them to read award winning books from time to time, reading is what matters most. The summer is a valuable time for them to be able to find new genres, authors, and books that they enjoy and want to read more.

 Apps to Encourage Summer Reading

Of course, managing reading time during the summer is important to me. We are in school until the end of June, but I always work on ways to encourage my own children to read as much as possible. We frequent the library a lot throughout the year, but sometimes technology can assist us. Some of the apps that I plan to use this summer to nudge my kids are listed below in a few categories.

Library Apps – Not everyone is able to get to the library as often as we are. Many local and state libraries now have apps for people to use. Our library app allows me to search their catalog to request books that I can pick up later. I am able to manage my account and renew items. Location and hours are available, along with a list of other ways to connect with them on social media. When my boys start reading a book series that they adore, I can go online to the library app and search for the next books for them to continue along. I no longer have to find the branch that has it, I can request that an available copy goes to my branch for pick up. Being able to get the next book quickly is priceless and can make everyone happy.

Finding a Good Book to Read – While I am a big fan of talking to the librarian at your local branch, that is not always an option. There are two apps that I will be using to help the kids find books this summer. Scholastic Book Wizard is the mobile version of Scholastic’s database of over 50,000 children’s books. The app allows you to search by book title, author, interest level, reading level (Grade Level Equivalent, Lexile Measure, Guided Reading Level, and DRA). While a teacher tool of sorts, it will definitely help families to search for more books to read together or independently.

I have been using GoodReads for years and want to utilize it for my boys more. When you add and review books, it keeps track and gives you book recommendations as well. In addition to this, many people have submitted their own reviews on GoodReads for others to read. I think it will be a wonderful way to keep track of books that they read or want to read. My youngest always has a book in his hand and I can’t keep track of what he has read these days. Setting up a GoodReads area on my account for him marked for a certain bookshelf would be easy to do.

Apps for Ebook and Audio Books

Kindle/OverDrive – While many people prefer paper books, there is still a convenience factor associated with eBooks. When traveling over the summer, you can carry more books on a Kindle app than in a backpack.  What I love with the Kindle app is that you can move from device to device and it will sync up where you have been reading. Bookmarks will not be lost and if you fall asleep reading, no worries about losing your place. You can easily purchase a new Kindle book from Amazon or borrow one from many library selections without leaving your home. Last summer, JSL fell in love with reading chapter books. Thanks to the online library options he rarely had to wait to continue with his reading.

Another fun option for summer reading is an audiobook selection. Families can listen to them during a road trip, or kids can relax and listen to a book while crafting or something else. OverDrive connects to online libraries where you can pick out books that fit your reading style. As noted in the past, OverDrive was fantastic during the school year for my son in middle school. Android devices allow kids to select from MP3 format book and it helps with their listening comprehension at the same time.

Apps to log reading time

Tracking Reading Time – My missing link is an app to have the kids keep track of the minutes read, along with books. I would adore something that logs the book title, how long they read, and possibly number of pages (so I know nobody is rushing and skimming). So far, I have found two possibilities and need to check into them a little more.

Reading Time Tracker allows parents to make an account and have child accounts within them. Both adults and kids can log in to use the stopwatch feature to track reading and record times. This app has been around for two years and has no reviews, so I need to research it a bit more to see if it will work for us.

I also found Reading Log. With Reading Log you can keep track of books read, date of reading, and time spent reading. There is no timer available to use within it to assist the kids when reading independently. This app only came out in April of this year and I have read that people wish you could have folders to keep track of items for multiple children. This may be a reason it will not work for us, but I plan to look more into it before the kids start their summer break

Why do I want a reading time tracker? It’s simple. I have one son that would play games and avoid reading without motivation. While he has found new books he enjoys this year, a reward system helps motivate him to read. In the past, we have set up an arrangement where minutes read earned minutes with his tablet, Nintendo WiiU, or computer. If you have tried any apps that may help us with this, I would love to hear about it.

No matter what we do, I want to make summer reading fun for our entire family. Life long readers are inspired when they have choices in literature. Be sure to look into summer reading programs at book stores, check out the Scholastic Summer Reading Challenge, and look for events at your local library. I know we will be going to our library and many others will also be participating in the Every Hero has a Story theme this year.

Tuesday Tales: New 2014 Summer Reading Selections

Over the 4th of July weekend, the boys received a gift from a cousin. It was a gift card to the book store and she told them they had to use it for books. This weekend, the boys begged to head to the store to select a special book of their own choosing. They kept to the wishes of Cousin A and went right to the books. We spent a LONG time looking at different options. NHL quickly found several books that were interesting and had to narrow it down. JSL was a bit more tricky. In the end, they each selected new to them book series to read.

Books for Summer Reading

NHL selected the first of the How to Train Your Dragon books by Cressida Cowell. JSL finally decided on Bad Kitty Meets the Baby from the Bad Kitty Series by Nick Bruel. Both of the boys started reading the books on the way home from our outing. What I never expected was JSL’s nose to be in the book at almost any chance he got. As soon as he woke up, he would run to the couch to read more about Bad Kitty. While we had roof work done on Sunday morning, he pulled out a chair and read. Before we knew it, JSL was finished with the 141 page book and begging for more.

The best news, thanks to the summer reading program at Barnes & Noble both of the boys can work toward another book in their series. Did I mention JSL had already read way more than the eight books that are required? He wants to go back to get his reward now.

Lovely Lilies and Beyond

Something people may not know about me, I am not a fan of receiving fresh cut flowers. While I believe they are beautiful, I do not like watching them slowly shrivel up inside my house. I prefer flowering plants that you can have inside like violets, orchids, hoyas, and more. My father has quite the collection of indoor beauties and I visit them often to take photos. Many of his plants have come from Lyndon Lyon Greenhouse, Inc which has been in business for 60 years.

I seem to kill plants when I bring them home. TechyDad and I have tried to plant some flowers around the house. I really love perennials so they come back year after year. One Earth Day we planted daffodils, but a bunny pulled them back up and destroyed the bulbs. This taught us to use capsaicin spray to keep some of the animals away. The same year that we bought the daffodils that are no more, we planted a rhododendron. This year, the conditions were perfect and it flowered to prove that it is still trying to survive after several harsh winters.

Over the years, we have planted lilies, kept some in giant planters, and others have spread naturally into large areas of our yard. We have many different varieties and sometimes I forget which colors will open until they show up each summer. Right now, we are waiting for the fifth variety to bloom, but we have had a show with all of these this year (many more photos on my Instagram feed).

There is just something wonderful about walking around and taking photos of flowers. You can see natural beauty up close in a way that you typically ignore on a day to day basis. What are you favorite flowers to have inside and outside of your home?

Saying Goodbye to Elementary School

First Days of Elemtary School

Watching your child grow up often comes with mixed emotions. This week has given me so many of those moments all at once. Monday morning, I cried driving the boys to school.

Why?

It hit me on the ride over that it would be the last Monday I would ever be taking both boys to the same school. NHL and JSL will never be in the same school again. This was the last year. The kids saw that I had tears in my eyes and asked why. I was honest and told them. They were so sweet and held my hands on the way into school. Clearly, they knew that Mom needed a little TLC.

Of course, more emotions were there on the last full day that both boys would be in the same school. Over the last month or so, I have watched each afternoon as NHL and JSL would grab each others hands and walk to my car. They would go ahead of me and talk about gym, lunch, class time, and homework. There was something special about this time and I will miss witnessing it.

Now, the school year is basically complete. I wanted to cherish all of this more, but living in the moment you often forget to do this. What hurts most is knowing there were days that I wanted this school year to be over, but in reality I never did. I liked knowing that the boys had each other in the same building if there was ever an emergency. I loved being able to see both of their smiling faces if I happened to stop by to help in one classroom or the other.

In September, things will be different. NHL will be off to a new adventure in middle school and JSL will continue along for the next four years in elementary school. As summer break is about to begin, my goal is to relax and enjoy the time with the boys. I want to have fun, explore, and help them to make special memories. We will try not to worry about the unknown that lies ahead of us with middle school and keep focused on summer and the next two months we have together.
