Home Farming with some help from Triscuit

Six years ago this April, we bought our house and moved in by July. The following year, TechyDad wanted to start planting flowers and possibly some vegetables. Over the years, he and our oldest son, NHL, have attempted growing many different items. Each year, our biggest nemesis has been the neighborhood "wild" bunny family. These furry pests have destroyed many items over the years.

After the first attempt at putting them into the ground did not work, the boys tried to put them into pots that were off the ground. This did better, but there were still problems. Last year, our plants were in large pots on our front patio. Finally, we had items that  were successful. We had a bumper crop if jalapeno peppers, a lot of mint, several cucumbers and a handful of tomatoes.

With Earth Day coming next week, we will probably try to plant some items this coming weekend. Our 2010 home farm will likely be grown inside our covered porch. This will allow it to have plenty of light, but protect our plants from bunnies, birds and hail.

During the Spring and Summer, we always support our local Farmers Market and love the local and fresh produce. Still, there is just something extra delicious about items picked from our own garden. In addition to the savings, our children have also learned valuable science and life lessons from growing our own plants and vegetables.

Thanks to Mom Central, I recently found out about a Home Farming campaign that Triscuit is working on. I received one of the four million boxes of specially marked Triscuit boxes that contains seeds to help start our own Home Farm.

Together, Triscuit and Urban Farming plan to create 50 community-based home farms across the country in 2010 in order to connect communities through growing food together. 

 

To help get this fantastic program off the ground, Triscuit is putting plantable herbs seed cards in four million boxes of Triscuit crackers to be grown on home farms in backyards and balconies. With Earth Day right around the corner, this spring proves ideal for incorporating home growing values into your family’s life. My belated birthday dinner – four months later

Being a December baby, I am used to the snow altering plans for my birthday celebrations. The white nasty stuff put a damper on things this past year. It is hard to believe that, four months ago, we had almost two feet of snow dumped on us – happy birthday to me!

Of course, the snow was just the start of the fun on that very cold and snowy December day. (Please note the extreme sarcasm here) While outside shoveling with my hubby, six year old NHL was hit near his eye with a shovel. I was inside the house baking my own cake when I heard screams and then saw a lot of red all over my child. A quick trip to the ER, glue and take out Chinese food rounded out the day.

TechyDad and I were supposed to go out for dinner at Hana Japanese restaurant, but it never happened. Things kept popping up and we pushed it off. Fast forward to Saturday when hubby and I left the kids with Nana and Papa and went out to dinner. We went to Hana and had an amazing dinner.

Belated B-day dinner in April

I had hibachi steak, while TechyDad opted for the hibachi salmon. We both started off with a bowl of miso soup. Everything was absolutely delicious. I made sure to save half of my meal for a lunch because I wanted to get something after dinner. Last year, we never made it to the local soft serve ice cream place. We packed up from dinner and went over. Both of us had the following:

That would be a mint and chocolate swirl cone. I swear, it tasted like a Thin Mint Girl Scout Cookie on a cone . . . it was amazing! When we were done with this, we went to Toys R Us for a kid free look around. JSL’s birthday is in a month, so we needed ideas without two kids telling what "I want" to everything they see.

All in all, my belated birthday dinner out was delightful. I told JL that I really liked the spring deal and not having to worry about driving to the celebration in snow and ice. Who knew a birthday outing could be so care free?! Thank you again to Mom and Dad for watching the kids, I know they had a blast with both of you.

A week gone by – Passover 2010

The count down begins. There are only three more Passover meals left until we can officially say the holiday is over and begin eating chametz again. The funny thing is I do not miss bread. I miss the little things. Here are a few of the items I can not wait to have again: 

  • Fiber One Bars – missing these a lot
  • Greek Yogurt – the Dannon All Natural that is for Passover is just not the same. It passes with fruits mixed in . . . or other items as I will mention later.
  • Cereal – Quinoa for breakfast is not my thing, the pilaf for lunch and dinner – YUM!
  • Gum – The Passover sugar free gum leaves a lot to be desired. It has little flavor and goes stale quickly. Really miss my Extra Watermelon Gum.
  • Cheese – The Kosher for Passover cheese is just not my favorite. The other ones we get during the year are SO much better.

No doubt, there are other items that I miss, but those were a few that came to mind. We have been eating a lot of fruits and vegetables. Broccoli stir fry with mushrooms was amazing. TechyDad also cut up sweet potatoes and put a little olive oil on them with salt and pepper. Those were delicious with chicken and quinoa pilaf.

The little guy did not eat much during the Passover Seders. The second night he devoured four giant matzoh balls. Check him out here:

Matzoh Ball time

For days, he would not eat matzoh in any other form. He would lick cream cheese off and pick off cheese when I made him matzoh pizza. Aside from slices of cheese, he would only eat "chocolate" yogurt. What exactly is "chocolate" yogurt you ask? Well, it is the Dannon All Natural Yogurt with a special mix in. The little guy was begging for his Chobani chocolate Greek yogurt and could not have it for Passover. I improvised with what we had. I took a chocolate macaroon and crumbled it up within the yogurt. Mix it all together. . . voila "chocolate" yogurt is born! This has been a huge life saver.

NHL has been a lot easier to please. He loves hard boiled eggs. I fear that he make start to cluck from eating so many over the last week. His favorite meal, aside from Aunt S’s matzoh ball soup, was the potato crusted fish fillets that we bought the boys. He absolutely loved them.

This year, we did not bake. We only had a few boxes of macaroon and the pre-made cakes that came with items we received from a gift basket. The only candy we bought were two bags taffy. No Chocolate bon-bon cookies, rainbow cookies, jelly rings or marshmallow logs. Keeping things simple, having delicious Seder food at Aunt S and Uncle M’s house, and not buying pre-packaged items was the way to go for us.

Making things sweet with Splenda

Making things healthier for our family is a major goal in our house.  We do not bake sweets too often because of extra sugar in these items. In addition to this, my mother and TechyDad’s mother are diabetic. We try to watch things because we know diabetes is in our genes. I was recently asked by Mom Central to participate in a Splenda tour to receive a free sample of Granulated Splenda No Calorie Sweetner and the Splenda Tastebook. I agreed since it was a fabulous opporunity to have some recipes to try with my family and friends that are diabetic and/or trying to watch their sugar intake.

We had Splenda packets in the house before this, but had never really used it for anything beyond adding to drinks. Splenda recently teamed up with celebrity Mom chef, Katie Brown, to offer recipes and tips on how to use Splenda in more items than you can imagine. Brown offers recipes for cookies, cakes, breaks and even smoothies.

Our sample and cook book arrived just before Passover . We wanted to try something quick and easy that did not require baking. TechyDad mentioned that we had a lot of overly ripe bananas. I opened up the Splenda Tastebook and found the Banana Strawberry Shake. It was the perfect fit since we had strawberries in the freezer. Bananas, strawberries, Splenda and fat free milk was all we needed with our handy dandy blender.

As you an see below, both of my boys loved it. My little guy actually drank a lot and told us he now likes strawberries. We liked it SO much that TechyDad and the boys actually made three batches of this for the entire family for a snack. It was delicious!

When Passover is over, there are a bunch of other items that look really good including the Chocolate Chip Pumpkin Bars. I will also be looking at other items to add to my online cookbook to make for my son’s party to bring special for the diabetic members of the family present. I know I have a lot of options with the online recipes and ones in my Tastebook thanks to Katie Brown who included not only drinks, desserts, but also side dishes, sauces, salads and salsas.

Cook’s Ham Giveaway for Easter

Yes, I am aware of the fact that I do not celebrate Easter. My family is Jewish and we celebrate Passover. Still, I grew up with friends that invited me over to celebrate Easter with them over the years. I have to admit, I was not a fan of ham. There was just something about it that I did not like. When I married TechyDad, he asked that we keep a kosher kitchen. That means no pork products and other non-kosher items in our house. Unlike my husband, I do eat non-kosher items from time to time when we are out and about.

Case in point was when I went to the Cook’s Ham blogger event at Price Chopper a little over a week ago. I did not think I was going to try the ham, but the smell and look intrigued me. Family, please forgive me. It was not the first time and will not be the last that it will pass by my lips! I was pleasantly surprised with the Cook’s Ham. It was nothing like the overly salty, hard to chew hams that I had tried in my life.

I have to admit something else, I am jealous. Ham looks like such a great and versatile protein to use with a family. The recipe possibilities and types of products are huge. Just from Cook’s you can buy: spiral ham, whole ham, half/portion ham, ham streak, and thick cut ham steak. There are a lot of great resources for recipes to use with the ham, as sides and beyond. A ham that was served as a main dinner can later be reinvented and used countless other meals that are fresh and do not seem like leftovers.

The truth is, there is no kosher meat like ham and I wish there was. Here is a ham conversation that I had with my six year old son the other day:

NHL: "Mom, can we have green eggs and ham today?"   (It was St Patrick’s Day)

Me: "I can make you green eggs, but no ham."

NHL: "Why not Mommy?"

Me: "Ham is not kosher, so we can not have it."

Without missing a beat. . . .

NHL: "Do they make kosher ham? If they do I really want it!"

*sigh*  Sad to say that will never happen, but a girl can certainly dream.

The fun part, there are even recipes on their website that I can use because not everything includes ham (delicious sounding desserts and sides included).
